This is an incredibly quick and easy dish, which I "borrowed" from a chicken recipe I don't weigh out any of the ingredients, just put together the amount which looks right to me
Lay the quorn fillets in a baking dish and rub each one with a little olive oil. In a bowl mix together breadcrumbs, grated cheese, salt and pepper to taste and herbs of your choice ~ I usually just go for dried mixed herbs Sprinkle this mixture over the quorn fillets ~ the olive oil should help it to stay in place better ~ and drizzle a little more oil over the top. Then simply bake at 200C for about 20 minutes, until the fillets are heated right through and the top is browned and crispy.
(The original recipe used chicken fillets, with melted butter in place of the olive oil and crushed plain crisps instead of breadcrumbs.)
I made this for dinner earlier this week and simply served it with mashed potatoes and baked beans ~ not a green veggie in sight, I'm afraid but I was running late and needed something quick and simple to go with the mash which I'd had the foresight to prepare earlier in the day

I did a similar thing with those "monster mushrooms" ~ have you seen them, they are huge things They are very satisfying though, I have to say
Anyway, I just put the cheese, herb and breadcrumb mixture in the mushrooms, sprinkled on a little oil and put a small amount of water in the baking dish to keep them moist. One mushroom each was plenty!
You could do the same thing with smaller mushrooms, too.
